Introduction

Baked oatmeal cups. Pour into muffin tins and top with fruit (apples, banana, blueberries, peaches, etc.), nuts (pecans, almonds, walnuts, etc,), coconut, or any combination of toppings. Ingredients


    2 large eggs, slightly beaten
    1 tsp Vanilla Extract
    1 small ripe banana
    1 cup Applesauce, unsweetened
    1 tbsp Honey
    3 cup Quaker Oats Old-Fashioned Rolled Oats
    1 tbsp Cinnamon, ground
    1 1/2tsp Baking Powder
    1 1/2 cup skim milk or unsweetened almond milk
    1/4 cup, packed Brown Sugar

Directions

Preheat oven to 350 degrees. Coat muffin tins with coconut oil spray. Combine eggs, vanilla, banana, applesauce, brown sugar, and honey in a large bowl. Mash banana and mix well. Set aside. Add oats, cinnamon, and baking powder in a small bowl. Stir well and combine with banana mixture. Stir in milk and mix well. Divide oatmeal evenly between prepared muffin cups and add toppings of your choice. (I make six of each - apple, banana, blueberry - and top with nuts.) Bake 20-25 minutes or until brown. Cool slightly and serve. These are great to make at the beginning of the week for breakfast each day. Serving Size: Makes 18 muffins
