Introduction

This is good as a great side dish with roasted salmon, roast chicken or even a delicious baked ham. For a filling and vegan one-pot meal, stir in a 19oz can of chickpeas and serve it over steamed spinach or kale! Ingredients

    1 tbsp water
    1/2 large yellow onion, diced
    1 cup vegetable broth
    1/2 cup white wine
    1 cup brown basmati rice
    1/2 cup orange juice
    1/2 tbsp orange zest
    1/2 tsp black pepper
    1/3 cup Crasins

Directions

Heat a large, nonstick pot over medium-high heat.
Add the water and onion amd cook 6-7 minutes.
Add remaining ingredients except pepper and Craisins. Bring to a boil.
Reduce heat to a simmer, cover and cook 40 minutes.
Stir in pepper and Craisins, recover and cook 5 minutes longer.
Remove from heat and let stand 5 minutes before fluffing and serving.
