Ingredients

6 whole wheat lasagne noodles, boiled and rinsed in cold water
    1 onion finely chopped
1 package of fresh spinach, washed well, chopped and then steamed till wilted
    1 lb lean ground beef
    1/4 cup bread crumbs
salt, pepper and nutmeg to taste
    1 onion sliced into rings
    Gravy:
1 vegetarian beef flavoured stock cube
    1 tbsp oyster sauce
    2 cups water
    4 Tbsps cornstarch
    worchestershire sauce

Directions

Make gravy by dissolving the stock cube in 2 cups boiling water. Add oyster sauce, worchestershire sauce and some pepper to taste. Blend cornstarch with a bit of water and add to the gravy. Bring to a boil stirring until thickened. Set aside.

Brown ground beef in a pot with half of the oil adding onions when the beef is halfway done. When fully cooked add the spinach, seasonings and bread crumbs, stir to moisten crumbs and take off heat.

Heat remaining oil at medium high heat and fry the onion rings till beginning to turn golden brown. Preheat oven to 350.

Put 1/2 cup of gravy in an 11 X 13 pan. Put in three noodles. Top with meat mixture and then three more noodles. Pour more gravy on the noodles until well coated. Reserve remaining gravy to pour onto casserole if it becomes a bit dry.

Top with onions and bake for 20 minutes to blend flavours.
