Ingredients

1 1/2 pounds boneless ,skinless chicken breast, cut into 4 ounce portions
1 medium onion, very thinly sliced
1/2 large green bell pepper, sliced
1/2 large red bell pepper, sliced
4 clove garlic, sliced
1/2 cup balsamic vinegar
4 oz can of mushrooms pieces or slices
10 pimento stuffed green olives
2-14.5 ounce cans of diced or crushed tomatoes
1 tsp dry oregano
1 tsp dry basil
1 tsp dry rosemary
1/2 tsp dry thyme
salt and pepper to taste

Use a slow cooker liner to save on clean up
Directions
1. Drizzle olive oil into the slow cooker. Place chicken breasts on top of oil and season each breast with salt and pepper.
2. Top chicken breasts with onion slices, peppers, garlic, oregano, basil, rosemary, and thyme. Drizzle balsamic vinegar over seasoned breasts and pour tomatoes on top.
3. Cook in the slow cooker set to high until chicken is no longer pink in the center and the juices run clear, about 4 hours.
4. Makes 6-4 ounce portions of chicken. Serve with rice or pasta.
