Cajun Brown Rice with black beans Cajun Brown Rice with black beans
Number of Servings: 10

Ingredients

    8 cups cooked Long Grain Brown Rice
    2 cans Black beans, rinsed and drained
    1 can Del Monte petite diced tomatoes with basil, garlic and oregano
    2 Teaspoons cajun seasoning
    2 teaspoons chili powder
    1 teaspoon dried minced onions

Directions

Cook brown rice according to package directions for 8 cups of cooked rice. Add 2 cans of black beans, diced tomatoes and spices, Heat thoroughly and stir together. Add more cajun seasoning to taste if desired.

This recipe can be halved for smaller portions. Makes 10 one cup servings
