    1 1/2 cup Ground Flaxseed (cab use Low Carb Success Cinnamon & Spice)
    2 cup Almond Meal
    1 cup Soy Protein (Not flour or in a can - use bulk)
    2 Tbs Stevia (no substitute)
    30 packets or 1/4 cup Splenda
    2 tsp Baking Soda
    4-6 tsp Cinnamon (personal taste)
    1/2 tsp Sea Salt
    1 cup pecan pieces
    1 cup Walnut Pieces
    1 Cup Egg Beaters or 4 eggs (was calculated with egg sub)
    6 Tbsp Olive oil
    1 1/4 Cup Applesauce (unsweetened)
    2 Cup Soy Milk


Mix dry ingredients together in one bowl
Mix wet ingredients together in one bowl.
Combine the two.
Spray muffin tins with non-stick spray
Fill muffin tin 3/4 full - don't rise much
Bake @ 350 20 minutes or untl knife inserted in middle of muffin comes out clean.
Makes 24 muffins
