Introduction

This is so easy and delicious. I love it on cold days. It also freezes and re-heats very well.
I garnish with a little fat free sour cream and some of the Light tortilla chips (garnishes not included in nutritional info).

Number of Servings: 8

Ingredients

    4 boneless, skinless chicken breasts or equivalent in skinless tenders.
    2 cans of Rotel (whatever variety you like).
    1 can of black beans
    1 can of pinto beans
    1 can of corn
    1 cup chopped onion
    1 package low-sodium taco seasoning
    1 package Hidden Valley ranch dressing mix

Directions

Cook the onions and chicken all the way through, either in a skillet or a big soup pot. Chop or shred the chicken up after cooking. ( A tip: If you buy the tenders, cut them with kitchen scissors as you put them in the pan. They will cook faster and already be cut up.)

In a big soup pot, add the chicken and onions along with both cans of Rotel, both cans of beans and the corn. DON'T DRAIN--ADD THE JUICE FROM THE CANS!

Mix in both seasoning packets.

Allow to simmer for as long as you like to get those flavors going!

Possible garnishes: a few avocado chunks, a bit of light shredded cheese, fat-free sour cream, those "Light" tortilla chips, whatever you like!

    This was yummy- although VERY spicy for kids. Next time I will omit rotelle and add canned tomatoes. My kids tried to eat it but it was just too spicy for them. - 9/1/08

    My husband and I ate this and thought it was excellent. Definitely the best tortilla soup we have tried. The longer you let it cook, the less spicy it becomes. I cooked it for a total of 9 or 10 hours over a period of two days (cooked and reheated). Much better (less spicy) the second day!! - 12/16/10

    I did this "American Idol" version---took it and made it my own! I had 3 chicken breasts, one can of Kroger's tomatoes and green chilies, added a can of lowfat/low sodium chicken broth, and cilantro. I didn't have the Hidden Valley mix, but it was still delicious. I'll make it again, for sure! - 5/11/09

    I'd definitely make this again! I added a can of chicken broth to increase the soup/juice. Family loved it! - 8/25/08
