Ingredients

2 cups Penne Rigate pasta
14.5 oz. can of diced tomatoes with basil, garlic, & oregano
10 oz package of fresh spinach
6 oz. of Neufchatel Cheese
1 tsp. crushed red pepper flakes
1/2 tsp. nutmeg
Directions
1. Boil pasta according to package directions. Drain, put back in pot, turn heat to medium/low.
2. Add can of diced tomatoes and red pepper flakes, heat through.
3. Cut up 6 oz. neufchatel cheese and stir it in, melting it into a sauce.
4. Add nutmeg.
5. Add the spinach one handful at a time, stirring it in and wilting it, until all the spinach is used.
6. Serve and enjoy! makes 5 servings

This is so simple and tasty. I used whole wheat penne and only 1/8 tsp nutmeg (might leave it out entirely next time). You might want to reserve some pasta water to help wilt the spinach, as the mixture gets a little thick with 10 oz of fresh spinach. Next time I might used thawed frozen spinach. - 12/6/10
