Ingredients

    2 whole-wheat pizza crusts
    2 packs 8 oz. pizza sauce
    2 cups mozarella cheese
    1 med-sized sweet onion
    1 red pepper
    1 yellow pepper
    1 small eggplant
    olive oil

Directions

Heat the charcoal or gas grill. Cut up veggies into large pices and brush with olive oil. Place on grill for 10 minutes and then turn over for another 5 minutes. Remove from grill. Chop the veggies to desired size.

Heat oven to 450 degrees. Spread one packet of pizza sauce and one cup mozarella cheese on each of the prepared crusts. Divide the chopped veggies between the two crusts. Place directly on oven rack for a crispy crust and bake for 15 minutes. Slide the pizzas onto a pizza pan to cut into slices. Serves 8; two slices each.

    made this tonight it turned out really good. the i changed it a little i grilled up some tomatoes on the grill and made a sauce with the grilled roma tomatoes and some fresh basil. and i also used green peppers. - 7/3/10
