Ingredients

    1 1/2 pounds of beef suitable for stew
    7 plum tomatos
    3 medium Tomatillos
    12 clove Garlic or one head
    1 large Onions, raw
    1 large red pimiento pepper
    1 dried chile guaque/guajillo
    2 bay leaves
    6 black peppercorns
    1 cinnamon stick
    2 whole cloves
    1/4 cup Canola Oil
    1/2 tsp Granulated Sugar
    1 tsp onion salt
    1 tsp Garlic Salt
    1 tsp Pepper, black
    1 large carrot shredded

PROCESS:
