Ingredients

    One 6 ounce can water packed tuna, drained
    2 tablespoons fresh parsley (I used flat leaf parsley)
    1 teaspoon extra virgin olive oil
    Juice of 1/2 a lime
    1/4 teaspoon of salt
    Freshly ground black pepper
    1/4 avacado, peeled and sliced thin
    1 tomato, sliced (I diced the avacado and tomato for easier wrapping)
    3 large romaine lettuce leaves

Directions

In a bowl, mix the tuna, scallions, parsley, extra virgin olive oil, lime juice, salt and black pepper. Put one third of the tuna mixture, avacado and tomato on each romaine leaf and fold into a wrap (I added these to the bowl and tossed instead). Serves 1
