Ingredients

    1 can 10 oz Rotel Tomatoes & green chilis w/ lime and cilantro
    1 16 oz bottle Kraft Zesty Italian Salad Dressing
    1 cup, chopped Green bell peppers (or any color)
    1 cup Red Onion chopped
    1/2 bunch fresh Cilantro chopped (2/3 cup chopped fine)
    1 TBSP Minced Garlic
    2 TBSP Lime Juice
    3 TBSP Jalapeno Peppers, Chopped and 2 tbsp. juice)
    3 cans Hunt’s Fire Roasted Diced Tomato 14.5oz
    2 cans Hominy 15.5 oz (white or yellow)
    2 cans Black Eye Peas w/ Jalapeno 15.5oz
    1 can Ranch Style Beans w/ Jalapeno 15.5oz

Tips

This recipe makes a large amount but may be kept in the refrigerator for a week or so...if it lasts that long!


Directions

Drain and rinse the hominy, black eyed peas and ranch style beans in a large colander and put in a large bowl. Add the remaining ingredients and mix well. Refrigerate for eight hours or overnight. May be eaten immediately but taste best if you do this.
The amount of onion, cilantro, jalapeno, minced garlic and lime juice may be adjusted to taste.
