Sausage Egg & Cheese Muffin Tops Sausage Egg & Cheese Muffin Tops

Ingredients

    8 Members Mark Cage Free eggs
    3 oz Members Mark Sharp Cheddar Cheese (grated)
    6 oz Jimmy Dean premium pork sausage country mild (cooked & crumbled)
    Salt & Pepper to taste

Directions

1. Cook sausage in skillet on medium high heat until cooked through and crumbled. Drain onto paper towels. 2. Whisk eggs in a bowl until frothy. 3. Grate cheese. Grease muffin pan with non stick cooking spray or oil. (I used cup cake liners but I think these would cook better just in the greased pan or in silicone molds). Add about a Tbsp of the cooked sausage in each muffin cup. Add in a sprinkle of grated cheese. Pour in egg until about 3/4 of the muffin cup is full. Bake at 350° for 20 min.
