Ingredients

    2 cups all-purpose flour (whole wheat)
    1 cup Quaker® Oats (quick or old fashioned, uncooked)
    2 tablespoons heat-stable sugar substitute equal to 1/4 cup sugar
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1/4 teaspoon salt (optional)
    3/4 cup fat-free milk (or unsweetened almond or soy milk)
    3/4 cup egg substitute or 3 whole eggs
    1/3 cup Tropicana Pure Premium® orange juice or Dole® 100% orange juice
    1/4 cup unsweetened applesauce
    1 tablespoon grated orange peel
    1/2 cup chopped cranberries, fresh or frozen (thawed)

Directions

Heat oven to 350°F. Grease and flour 9 x 5-inch loaf pan.
In large bowl, combine flour, oats, sweetener or sugar, baking powder, baking soda and salt; mix well. In medium bowl, combine milk, egg substitute, orange juice, oil and orange peel; blend well. Add to dry ingredients all at once; stir just until dry ingredients are moistened. (Do not overmix.) Stir in cranberries and nuts. Pour batter into pan.
Bake 60 to 70 minutes or until wooden pick inserted in center comes out clean. Cool in pan on wire rack 10 minutes. Remove from pan. Cool completely. Store tightly wrapped.

    Very Good
    I couldn't find frozen or fresh cranberries so used dried ; used no oil b/c the applesauce replaces it; i used 1/4 cup Domino sugar/stevia blend , a 1/4 cup whole wheat flour, and the rest a mix of bread and all-purpose flour, i placed in oven for 50 min n it was done, a little dense but tasty! Tnx! - 2/26/12

    Very Good
    Yes, Very Good. I had to make up a few things as I went along. Oil and nuts were not listed in the ingredients, but in the directions, so I added 1/4 cup of olive oil and 1/2 cup of slivered almonds, along with doubling the cranberries. I didn't put in the apple sauce, Yep, Very good. - 10/15/10

    Overall very good...I like my bread just a little bit sweeter so may include a little more sugar next time, but it was a great breakfast bread! - 2/3/09
