    1/2 cup Brown Sugar, packed
    1/2 cup Arrowroot flour
    1 1/2 tsp Baking Powder
    1/2 tsp Cinnamon, ground

    2 Eggs, fresh, large
    1/3 cup Olive Oil
    2/3 cup Water
    1/2 cup Hazelnuts, chopped

Directions

Preheat oven to 400 degrees. Grease muffin pans. Combine flours, arrowroot, baking powder, cinnamon and salt. Mix eggs, oil and water and add to the flour mixture, mixing quickly. Add nuts. Fill greased muffin pans 3/4 full. Bake for 25 minutes.

NOTE: You may subsitute potato starch or tapioca flour for arrowroot starch.

    Incredible!
    Am eating one now...Super good. I had teff and ground it into flour in my coffee grinder( easy peasy) and doubled the cinnamon and sprinkled the tops with coconut. - 5/22/13
