Ingredients

    1 large Egg Yolk
    .5 tbsp anchovy paste (by ABSINTHE.GREEN)
    1 clove Garlic
    1 fl oz Lemon Juice
    1 tsp Lea & Perrin's Worchestershire Sauce (by CALEKU)
    1 tsp hot sauce - Cholula hot sauce
    .25 cup Olive Oil
    1 tsp Dijon Mustard (Great Value)

Tips

Bring out the egg early to get it to room temperature to aid in blending process. Pre-grate the Romano and chop the garlic before you start to make the dressing super fresh when you add it all to the salad.


Directions

Separate yolk and place in the bottom of a medium mixing bowl. Add all the ingredients except olive oil and parmegianno romano. beat to an even blend. Slowly add olive oil until the consistency changes from smooth to creamy - you will see it change - around a quarter cup depending on the actual amount of the rest of the ingredients. Fine grate cheese and add at the end. I usually prep cheese in advance. Pour over pre-chopped or ripped romaine lettuce and toss with salad tongs. Finish with croutons and bacon bits if desired and serve immediately. Don't try to save left overs because of the amount of oil in the dressing so make sure you want to eat the entire amount in one sitting!

Serving Size: one family salad size (8 - 10 cups of romaine, chopped)
