Introduction

This is traditionally made with wheat bulghur, but you can you couscous as well. This is traditionally made with wheat bulghur, but you can you couscous as well.
Number of Servings: 7

Ingredients

    3 cups cooked couscous
    1/2 lemon for juice
    2 tsp garlic
    Olive oil as needed
    1/2 cucumber, peeled, seeded, and diced
    1 small green apple, cored, peeled, and diced
    1/4 cup tomato, diced
    2 tablespoons fresh mint
    salt and pepper to taste

Directions

Get a large bowl. Add ingredients as they are chopped. Add couscous and mix adding oil as needed to prevent clumping. Add lemon juice and mix. Chill until cool. Eat. 1 serving is 1 cup.
