Ingredients

    4-5 Japanese Sweet potato
    4 tbsp Olive Oil
    1 tbsp Celery seed
    1 tsp Cayenne pepper
    1 tbsp herbes de provence
    (The herbs include thyme, Rosemary, basil, parsley, oregano, tarragon, marjoram, and lavender flowers.)

Directions

Peel and cube sweet potatoes Mix olive oil, herbs de province, cayenne pepper, and celery seed in a large bowl. Add sweet potato and stir to coat. Pour sweet potatoes onto a aluminum foil or parchment lined baking sheet. Cook 30 minutes stirring every 10 minutes to keep from drying out.
