Introduction

Ingredients

    1 tbsp Olive Oil
    4 tsp Garlic
    1 large Onions, raw
    285 grams Mushrooms, fresh
    74 gram(s) bell pepper, red, sweet, raw
    24 oz Tomato, grape (3oz = appro 12 tomatoes)
    1 cup, grated Carrots, raw
    .25 tsp Salt
    .25 tsp Pepper, black
    1 tsp Oregano, ground
    4 serving 1/8th tsp red pepper flakes (by BUDDY_LOVE)
    3 tbsp (C) Vinegar, Red Wine (Gr Value)
    12 oz Soyrizo, Vegan Chorizo
    4 serving Field Roast Vegan Sausage - Smoked Apple Sage (by DS1222)
    4 serving Barilla Pasta - Whole Grain Penne (1/4 cup)

Tips

I wanted all the tomatoes to burst open to make a pasta sauce, but it was taking a while, so I used a potato masher to squash them.


Directions

Chop up the peppers, onion, and veggie sausage. I used pre-chopped garlic from a jar.

Cooked all the veggies and soyrizo in a large frying pan with spices. Cooked pasta separately and sated the vegan sausages. Mixed everything together for a spicy weeknight dinner.
