Ingredients

    3 cups thinly sliced english cucumber
    2 tablespoons minced green onions
    1 tablespoon rice vinegar
    1 teaspoon Splenda
    1/2 teaspoon crushed red pepper
    1/2 teaspoon dark sesame oil



Directions

Combine cucumber, onions, rice vinegar, slenda, crushed red pepper, and sesame oil in a plastic container with a lid. Shake to mix dressing. Serve chilled or at room temperature.

Makes 6 - 1/2 cup servings.

    Good
    I love that it is "splenda-fied", I also love sesame oil - it works well with this version of marinated cucumbers. And it is easy to make, refreshing, and is a great summer side. But it is not quite "tangy" enough for me ... I'll be investigating - more vinegar? A seasoned vinegar? Thx, tho. - 7/31/11
