Introduction

There is nothing better than a fish fry especially if you caught the fish or if it’s fresh from the market. We are so lucky to have neighbors who love to go off shore and fish. We are even luckier that they share their bounty with us! In this recipe I used fresh Mahi Mahi but any fish will work. It’s a simple recipe made with ingredients you are sure to have on hand but taste like it came from your favorite restaurant! Ingredients

    24 oz Mahi Mahi
    1 cup All-Purpose White Flour
    1/4 cup Arrowroot flour (or cornstarch)
    1/2 cup Yellow Cornmeal
    1 cup Peanut Oil (or vegetable oil)
    2 Large Eggs
    2 Tbsp cold water
    Salt & pepper to taste

Directions

Place fish on paper towels to absorb moisture. Meanwhile, throughly mix flour, arrowroot and cornmeal together in bowl. In a separate bowl mix eggs with 2 Tbsp cold water. Season both sides of fish with salt & pepper. Add oil to fry pan (about 2 inches) and heat to 350 degrees. Dip fish in egg mixture then in flour mixture, shake off excess flour. Fry until golden brown flip and fry other side. Remove from pan and place on cooling rack or plate lined with paper towels. Season with salt & pepper again. Do not crowd fish; may need to fry in batches.
