Ingredients

4 oz Lean Pork Loin, without bone
Salt & Pepper to taste
Vegetable Cooking Spray
2 tblsp Chopped Onion
1/2 cup Fresh Sliced Mushrooms
1 tsp Soy Sauce
1 clove Garlic finely minced
Pinch Ground Ginger
1 tsp Lemon Juice
2 tblsp Dry White Wine
Tips
Spoon pan drippings over chop and brown rice, barley or bulgur. Add a green vegetable and unsweetened applesauce for a complete meal.
Directions
Trim all visible fat from chop. Sprinkle meat lightly with salt & pepper (I just use pepper). Brown chop on both sides in non-stick frying pan. Remove the chop and place in a small heatproof casserole or baking dish sprayed with vegetable spray.
Cook onion and mushrooms in frying pan until onion is limp. Cover the chop with onion mixture.
Combine the remaining ingerients in small cup; mix well. Pour over the chop. Cover pan with aluminum foil and place in a pre-heated 350° oven and bake for 30 to 35 minutes, or until chop is tender and thoroughly cooked.
Serving Size: 1 serving
