Ingredients

    1.0 cup Goya 16 bean soup mix (dry)
    2.0 cup Del Monte Diced Tomatoes, No Salt Added
    1.0 cup, chopped Onions, raw
    2.0 cup, chopped Carrots, raw
    2.0 stalk, large (11"-12" long) Celery, raw
    8.0 cup Beef Broth - Swanson Low Sodium

Directions

Rinse beans . Put the beans in a large pot and soak in 8 cups of water for 30 min. Cut up carrots and celery and onions and set aside. After beans soak for 30 min. drain and return to pot add vegetables, beef broth and diced tomatoes. Add spices bay leaves and thyme. Bring to a boil, reduce heat and simmer 45 minutes.
