Ingredients

2.25 cup Flour - Gold medal all purpose flour
1 cup Granulated Sugar
1 tsp Baking Powder
1 tsp Pumpkin Pie spice
.5 tsp Salt
2 large Egg, fresh, whole, raw
.5 cup Canola Oil
1.25 cup Libby's 100% pure canned pumpkin
1 cup cranberries (fresh) (by CBWEBER)
Tips
Versatile recipe, you can enjoy plain and simple or add a bunch of things to it. As long as the basic ingredients are there, it's hard to make a mistake with this bread.
Directions
Preheat oven to 350.
Mix wet ingredients, including pumpkin in large bowl. Gradually add dry then fold in cranberries. Put into either one large loaf pan or divide between 2 for smaller loaves.
May be included: Pecans, walnuts, sour cream (1/2 cup), wheat germ (2 Tblsp).
Bake at 350 for 50 minutes. Check with clean knife or toothpick.
