Ingredients

4 medium Peppers, green, red, orange or yellow
8 oz Turkey, Ground turkey, 93% lean
1/2 cup Bush's Low Sodium Black Beans
1/2 cup Yellow Sweet Corn, Frozen
3/4 cup Bulgur, cooked
1 cup Salsa
1 cup Cheddar Cheese fat free Kraft Shredded
1 cup, pieces or slices Mushrooms, fresh
1 tsp Garlic, chopped
1/2 cup Onions, chopped
Salt & Pepper to taste
1 tbsp Extra Virgin Olive Oil
Directions
Preheat oven to 400°.
Cut thin slice from stem end of each pepper. Remove seeds and membranes; rinse. Place peppers cut side up in ungreased glass pie plate or casserole. Cover with plastic wrap; microwave until hot, 3 to 3 1/2 minutes. Uncover and set aside.
Heat 1/2 tblsp olive oil in a large skillet over medium-high heat. Add in the onions and saute for 1 minute.
Add ground turkey, garlic, salt and pepper, and cook, tossing and breaking up the meat as you go with a wooden spoon.
Stir in salsa, bulgur, black beans and corn, and cook until meat is cooked through about 5-7 minutes.
Lightly pat dry the moisture inside the peppers with a paper towel. This helps so much!
Stuff the peppers with your taco mixture, sprinkle with cheese then place into the preheated oven and bake until cheese is melted, about 7-8 minutes.
Remove from oven and top with your favorite toppings (sour cream, chopped avocado, cherry tomatoes, etc.)
