Introduction
It's my favorite. The walnuts and Beyond Sausage make it meaty and protein rich. It's my favorite. The walnuts and Beyond Sausage make it meaty and protein rich.Number of Servings: 8
Ingredients
-
1 box Mrs. Cubbison's Cube Stuffing
3/4 Onion, diced
3 stalks, Celery, diced
1 oz Walnuts, raw or toasted (can sub pecans)
3/4 cup Golden Raisins
1 Beyond Meat Brat pre-cooked (can sub LightLife Gimme Lean Sausage)
1 cube Vegetable bouillon, dissolved in 2 cups boiling water
1 medium red apple, peeled and chopped last (I use Fuji)
Salt, Pepper, Sage, Oregano, to taste
Tips
This recipe will work beautifully whether or not you sautee the onions and celery in advance. If you have time, it's nice to get the onions a little golden and the celery softened before combining.
About 10 minutes over low-medium heat, with a spritz of oil or broth.
Directions
Preheat oven to 350 degrees
(Optional: sautee onions and celery for 5-10 minutes to soften)
Pour the stuffing into a large, deep glass or metal pan. Add the sauteed or raw onions and celery, nuts, raisins and sausage. Finely chop the peeled apple last (optional - add a spritz of lemon juice to keep from browning).
Gently toss to combine (clean hands do this best)
Add as much of the bouillon broth as needed to moisten, without over-saturating
Cover. Cook for 45 minutes
Uncover. Cook an additional 15 minutes
Serving Size: Makes approximately 8 servings
Number of Servings: 8
