Ingredients

    1 dash Pepper, black
    1 1tsp Olive Oil
    1 potato (2-1/2" dia, sphere) Boiled potatoes
    3 oz Yellowfin Tuna (fish)
    0.33 serving Newman's Own Lighten Up Sun Dried Tomato Dressing, 2 Tbsp
    0.25 cup Red Onion Raw (1/4 cup, 40g or 1.4oz)
    1 serving Great Value Manzanilla Green Olives (Pimiento Stuffed ) 5 Olives
    .25 cup, chopped Peppers, sweet, red, fresh

Directions

Makes one Lunch or Dinner serving.

* Grilled Mediterranean Ahi Tuna (Recipe)
** Spring Potatoes With Garlic Scapes(Recipe) or you can use any red or yukon gold boiled potatoes

Chop up Potatoes and Tuna into small bite sized pieces and place in a small mixing bowl. Add all other chopped ingrediants. Drizzle over olive oil and Dressing add fresh black pepper. Toss until well coated then, Refrigerate till lunch. (At least 2-4 hours or overnight)

Pack up to carry in for lunch. You can eat salad as is or serve on a bed of Greens of your choice with fresh summer tomatoes as garnish.
