Tips

This is a massive amount of soup. Canned clams are used for convenience, you can substitute fresh. You can also use any fish instead of tilapia, or add any additional seafood.

Directions

1. Sautee onion and garlic in large pot in 1 cup of oil. Add wine, boil 3-4 minutes. Add crushed tomatoes, potatoes, clam juice, sugar, 4 tsp of salt, CRP flakes, oregano, thyme, 4 cups water. Bring to a boil, reduce heat, simmer covered for 25 minutes.
2. Toss fish with remaining oil and salt, bake at 400 degrees until cooked. Set aside and keep warm, it will be added just before service.
3. Remove thyme sprigs, add butter; add clams and simmer covered 6-7 minutes.
4. Add shrimp, simmer 5-6 more minutes.
5. Remove from heat, add tilapia and stir.

Serve with warm sourdough.
