Ingredients

20 Wonton Wrappers
1 15oz. can of black beans
3 oz. Nonfat Greek Yogurt (Or sour cream)
1 large garlic cloves, minced
4 scallions finely chopped
1 tablespoon light butter
1/4 teaspoon cumin
pinch of cayenne pepper (optional)
1 teaspoon salt
1/4 teaspoon black pepper
leaves of 1 bunch of fresh oregano, trimmed well from stems (or 2 T dried oregano)
juice of half a lime
Directions
1. Mix beans with cumin, peppers, and salt. Add the butter. Blend with a hand blender until the mixture is slightly bumpy, but mostly smooth and creamy.
2. Add tablespoon size dots of the black bean mixture to each wonton wrapper. Dip your finger in a bowl of water and trace lines around each dot of bean filling to close the sides of the wonton ravioli.
3. Bring a large pot of well-salted water to a boil. Drop in ravioli and cook for about 2-3 minutes each. Remove gently with a slotted spoon and drain. Transfer ravioli to a bowl filled with greek yogurt* and toss with salt, pepper, oregano, and lime juice. Add cheese if desired.
* In order to keep the ravioli from sticking, toss in olive oil before adding to the greek yogurt mixture.
