Introduction

This is an easy way to have a melt-in-your-mouth roast with satisfying veggies. This is the home-style version that I make, however, it is easily modified to be lower in fat, calories, and salt. Ingredients

    2-3 lb. beef shoulder roast, trimmed & washed
    1 can beef broth (or make with cubes)
    1 can water
    1 can cream of mushroom
    2 cans whole peeled potatoes
    10 baby carrots (or 2 chopped carrots)
    2 Tbs. (or less) salt
    1 Tbs. onion powder

Directions

Wash and trim roast. Salt and season one side of meat and place seasoned side down into crock pot. Salt and season top of meat and let sit about 5 minutes while you prep. veggies and open cans. Dump soup, broth, and water over meat. Cook on high for 1 hour and flip meat. Cook on low for 6 hours. Add veggies and cook additional 1 hour or until veggies are tender. Makes 6 generous portions. Leftover meat makes WONDERFUL sandwiches!
