Number of Servings: 3

Ingredients

    2 tsp Vegetable or canola oil, reserve 1 tsp.
    2 Great Value Pork Sausage patties, defrosted and chopped
    1/2 cup Green Bell Pepper, seeded and chopped
    1/2 cup Red Bell Pepper, seeded and chopped
    1/2 cup Yellow Onion, chopped
    1-2 tsp Soy Sauce
    2 eggs, beaten

Tips

Garnish with thinly sliced scallions, if desired.


Directions

Heat large non-stick frying pan or wok over high heat. Add 1 tsp oil, chopped pork sausage, brown 1-2 minutes. Add chopped peppers and onions, stir and cook 2-3 minutes. Add cooked white rice, stir and cook 2 minutes; add soy sauce, stir. Push rice mixture to pan edge. Add reserve 1 tsp oil to the pan, followed by the beaten eggs. Scramble eggs until set. Mix eggs with rice mixure. Serve.
