Number of Servings: 4

Ingredients

    1.5 cup Tomatoes - sm cherry tomatoes
    1.0 cup slices Cucumber (with peel)
    2.0 serving Baby Bell Peppers (3 peppers = serving)
    0.1 oz onions, raw, purple/red (1 slice)
    1.5 tbsp Extra Virgin Olive Oil
    1.5 tbsp (C) Vinegar, Red Wine (Gr Value)
    1.0 clove Garlic

Directions

Combine oil and vinegar, season with desired herbs and spices (I use oregano), s+p. Chop and combine veggies, add dressing, chill and serve.
