    1 cup small cauliflower florets
    1 cup baby carrots, halved
    1 cup mushrooms, cut into small pieces
    2 T water
    1 cup snow peas, cut
    14 oz can artichoke hearts, cleanned & cut
    1/4 cup sliced ripe olives
    1/4 cup garbanzo beans, rinsed
    1/4 cup frozen green peas
    3 green onions, sliced
    2 6-oz cans water packed solid white albacore
    3 oz cheddar cheese, diced
    1 C light done right italian dressing
    1/4 cup grated parmesan cheese
    1 t lemon pepper


Combine cauliflower, carrots, mushrooms and water in a bowl. Cover tightly and microwave 5 minutes. Let stand for 3 minutes, covered. Drain completely. Combine with remaining ingredients and mix thoroughly. Refrigerate overnight. Makes 4 (1 1/2 C servings.
