Ingredients

    SERVES FOUR

    1 cup dry couscous
    6 Tbsp Extra Virgin Olive Oil
    1/2 cup chopped bell peppers
    1/2 cup chopped red onion
    1/4 cup lemon juice
    1/2 a whole cucumber, chopped
    2 plum tomatoes, chopped
    1/4 cup crumbled feta cheese
    1 cup water
    oregano, thyme, salt, pepper to taste

Directions

1. Prepare veggies. Heat 2 Tbsp oil in a saucepan
2. Add onions and peppers, saute until softened, about 7 minutes
3. Meanwhile, whisk 4 Tbsp olive oil with lemon juice
4. Add cucumber, tomatoes, cucumber to the lemon/oil mixture, set aside
5. Add 1 cup water to the saucepan
6. When it comes to a boil, add couscous and seasonings. Stir quickly. Remove from heat and cover. Let stand 4-5 minutes.
7. Pour lemon/oil/veggies and into couscous mixture to thoroughly combine.
8. Sprinkle feta on top. Serve.
