Introduction

This is the 2nd Version of my Easy chicken & bacon Quesadilla. Ingredients

    1/3 cup Mexican Blend Fancy Shredded Cheese
    1 TBSP Real Bacon Pieces
    4 tbsp Picante Salsa (Hot)
    2 Flour Tortillas 6" (100 calories Each)
    1 Oz. Boneless Skinless Chicken Breasts for Fajitas (Pre-Seasoned/Marinated) - Appx. 1/4 cup of meat

Tips

You can add all bacon pieces to the inside of the quesadilla, and only top with cheese, if preferred. You can also add 1 Tbsp of chopped onions to inside if preferred. And you can add sliced jalapenos to top before baking.

There are also other flour tortillas out there with fewer calories per serving to help cut down on the calories. These are just what I had on hand. This makes a GREAT snack, lunch or dinner paired with refried beans or pinto beans, sliced avocado or a light salad.


Directions

Pre-heat Oven to 350.
Spray the bottom of a cookie sheet with Olive Oil Spray. Lay 1 flour tortilla flat and top with Pre-heated leftover chicken fajita meat, and sprinkle 1/2 TBSP. Bacon over it. Add 1/2 the cheese, and 2 TBSP of Salsa. Make sure ingredients are spread over the tortilla evenly.

Cover the tortilla and Chicken mix with the other tortilla. Spread the remaining Cheese, Bacon Bits & Salsa over the top. Place in oven and Bake on 350 until the cheese is melted.

Cut into 4ths. For fewer calories eat only 1/2 the quesadilla

Serving Size: Makes 1 Quesadilla (4 slices)
