Ingredients

14.5 oz can Crushed Tomatoes
25 oz can Hunt's diced tomatoes , basil, garlic & oregano
4 tbsp chopped Shallots
4 clove Garlic
3 tbsp Oregano, ground
12 anchovy Anchovy (anchovies)
.25 cup Peanut Oil (or any neutral oil)
2 tsp Granulated Sugar
3 link, 4/lb Italian Sausage, pork -- replace with 1 block pressed tofu for a vegan experience
Tips
Really simple. Fry up a block of pressed tofu to keep it vegan.
Directions
1. Mince shallots, crush and mince garlic, drain and chop anchovies
2. Heat oil in pot. When sizzling, add above, stirring well
3. When it starts to brown, toss in oregano and stir until it gets aromatic
4. Add tomato products, anchovies. Bring to a boil then reduce to simmer with cover on
5. Pierce and cook sausages in pan. Cook on medium heat, turning each 1/4 way every 3-4 minutes.
6. Let cool, then slice into 1.5"-2" chunks and add to tomatoes. Also add 2T grease (mmm... great fat flavor!)
7. Stir occasionally for 30 minutes
