Ingredients

    4.0 serving Corn on the Cob, fresh med. ear
    1.0 fruit without skin and seeds Avocados, California (Haas)
    2.0 serving Green Onion (fresh-1 stalk)
    0.3 cup Olive Oil
    1.0 lime yields Lime Juice
    1.0 tbsp Cider Vinegar
    1.0 medium whole (2-3/5" dia) Red Ripe Tomatoes

Directions

Clean corn and remove from cob. Dice tomato and avocado, slice green onion with some of greens. Add tomato,avocado and onion to corn and mix well. Combine oil,lime juice and vinegar. Add spices of your preference if you like I add 1 teaspoon of cumin or even taco seasoning. Pour dressing over salad toss gently, cover and chill for at least 1 hour prior to serving. Season to taste with salt and pepper prior to serving.

Serving Size: Makes 4 1- cup servings.

    This very delicious, but I have to be cautious of avocados because of the fat content. I am on a low fat diet. - 5/21/20
