Ingredients

    3 large egg
    1 cup butter, unsalted, softened
    1 cup packed brown sugar
    2 tsp vanilla extract
    2.5 cup Flour
    1 cup dry oatmeal
    0.75 cup sugar
    1 tsp Baking Soda
    1 tsp Baking Powder
    0.75 tsp Salt
    1 cup semi sweet chocolate chips
    1 cup butterscotch chips
    0.75 cup, shredded Coconut

Directions

Cream together eggs, softened butter, sugars and vanilla. Add half the flour, salt, baking soda and baking powder and mix well. Add other half flour, and incorporate into batter. Add oatmeal and mix well. Fold in chips and coconut. Chill in sealed bowl in refrigerator overnight if possible. when ready to bake, preheat over to 350. Using cookie scoop, measure out cookies onto baking sheet. Bake for about 10-12 minutes or until golden brown around edges. Let cookies sit on cookie tray out of oven for two minutes before placing onto cooling racks. Makes about 60 cookies.
