Introduction

A variation on hamburger soup I knew growing up as a kid. A variation on hamburger soup I knew growing up as a kid.
Number of Servings: 8

Ingredients

    1 pound Lean ground Pork (80/20), browned
    1 large onion, sliced
    6 7" stalks of cellery, including center leaves, chopped
    4 cups Organic Chicken Broth
    4 cups water
    1 cup carrots, chopped
    1Tbsp Olive Oil
    10oz bag baby spinach
    2 cups sliced mushrooms
    2 cloves Garlic, minced
    Salt and peper to taste.

Directions

Add Onions and celery to skillet with browned pork. Stir ocassionally until vegies are opaque.
Add Water and Broth to Stock Pot bring to a boil.
Add Carrots to stock pot.
Once Carrots begin to soften add contents of skillet to stock pot.
In same skillet with 1T olive oil saute spinach and garlic.
When spinach is wilted add mushrooms stirring till moisture begins to come out of mushrooms.
Add contents of skillet to stock pot. Let simmer for 10-15 minutes on Medium-Low.
Season to taste.

    Very Good
    This was a great recipe to use as a starter. I did do a few changes.... I didn't have enough Ground Pork, so, I added some Hot Italian Sausage. I didn't use Mushrooms... I added Chili Flakes for added heat...cause we love spicy! I did the whole thing in one pot. Yummy! - 3/4/10
