Ingredients

    .25 cup Flavored Bread Crumbs
    1 TBS. Basil
    1 TBS. Bay leaves (crushed)
    1 TBS. Garlic powder
    2 TBS. Grated Parmesan Cheese
    Salt
    Pepper
    1 lb. Cod Fillets

Directions

Preheat oven to 375.

Assemble a wire cooling rack on top of a cookie sheet & spray with nonstick cooking spray.

Place bread crumbs in shallow dish (I use a pie plate). Add all seasonings & cheese, and thoroughly mix. Press cod into bread mixture and evenly coat. Place coated fillets onto rack and bake for 10 - 15 minutes. (I turn the broiler on for the last couple minutes to crisp the fillets!)

Remove from oven & enjoy!!

    Great recipe! The only thing I did was I added 1 TB low fat mayo and spread on fish before but crumb topping on. We loved this. - 2/14/13

    This was so easy and yummy!!! I have never experimented with fish because my family didn't eat it a whole lot, but this was easy and delicious! Had the husband and guests thinking I was a professional! Thanks for the recipe!!! I will totally make this again!! - 6/18/11

    Very Good
    Made this last night. VERY GOOD. Substituted panko for the bread crumbs, that's what I had. Followed recipe on the rest. Lots of garlic was a bous for us. I am having it on double the fiber english muffin with laughing cow cheese, lettuce and onion todayusing the leftover piece. Loved it. - 11/9/10
