Ingredients

    16 oz ground turkey, browned
    2 large bell peppers, diced
    1 cup chopped mushrooms
    1 can low sodium black beans, rinsed well
    2 cup frozen yellow corn
    4 serving Bob's Red Mill Organic Farro
    2 cup Spinach, fresh

Tips

Is easy to freeze and great reheated


Directions

Brown ground turkey with hamburger seasoning and garlic. In large dutch oven, add farro, bell peppers and mushrooms and cook to the package directions with 1 1/2 cup water, until farro is done. Sprinkle with chili powder and ground cumin to taste. Add ground turkey, black beans, frozen corn and spinach and stir well. Simmer for another 10 minutes or until the spinach is wilted. Mix well. Serve hot.

Serving Size: 1 cup serving, makes about 12-14
