Ingredients

    100g uncooked couscous
    1 chicken or vegetable stock cube
    100g feta cheese, crumbled
    6 cherry tomatoes, sliced
    12 black olives, sliced
    1 handful of rocket (or other salad greens)
    1 tbsp olive oil
    Fresh basil and coriander, to taste

Directions

Soak the couscous in 125ml of boiling water, and stir in the stock cube. Once it's cooked, add all the other ingredients to the warm couscous. Season to taste and eat immediately.
