Introduction

This is a very tasty sourdough bread, made using artisan bread methods. I use a plastic container to cover the loaf pan because it is reusable and less likely to stick to the dough than plastic wrap. the gluten flour helps the dough rise, it can be replaced with whole wheat flour if desired. Ingredients

    1 cup Sourdough Starter (by COFFEECHIT)
    1/2 cup gluten flour
    2 1/2 cups Flour, whole grain
    1.5 cups (8 fl oz) Water, tap
    1.5 tsp Salt

Directions

1. Combine starter, flour, water and salt in a container with a lid.
2. cover and leave on the counter overnight.
3. In the morning work enough flour into the dough to form a loaf.
4. place in an oiled loaf pan and cover with an inverted plastic container large enough to cover the loaf pan. Let rise until doubled.
5. Preheat the over to 425 degrees.
6. Reduce heat to 400 degrees with the loaf is placed in the oven and place the loaf pan on the lowest oven rack.
7. Bake for 30 to 40 minutes, until browned.
