Ingredients

    1 sm can Green Giant Mexican Corn (by CYNTHIAL904)
    2 cups Kirkland Organic Salsa
    1 can Beans, black, drained and rinsed
    2 tbsp Mexican Seasoning (home prepared) (by MRSWORKS2908)
    1 tsp Salt
    2 serving Guacamole - Wholly Guacamole 2 Tbsp
    2 oz Cotija Queso Seco Cacique cheese
    2 lbs. Pork Loin Roast,
    10 serving Mission corn tortillas Restaurant Style ( 1 serving = 2 corn Tortillas)

Tips

You can also cook it on low for 6 to 8 hours. I set it up before I go to work, turn it on low and finish it up when I get home.


Directions

Place pork in bottom of crockpot. Add corn, salsa, beans, and seasoning mix. Cover and cook for 3 to 4 hours on high. Use two forks to shred the pork. Add salt to taste. Allow to cook for another 30 minutes. Dish out into taco shells and top with guacamole and cheese. Other possible toppings include red onion, cilantro, and a squeeze of lime.
