Introduction

Ingredients

    2 cup, chopped Onions, raw
    4 serving Tomatoes, Roma small (2-2.5" diameter; whole)
    1 tsp Ginger Root
    1.5 tsp ground tumeric (by INSPIREDBYCHJ)
    1 tsp Cumin seed
    1 tsp Caraway Seed
    0.5 tsp Cinnamon, ground
    4 sweetpotato, 5" long Sweet potato
    4 cup Wegmans Organic Vegetable Broth (by STONEANGEL87)
    1 cup Lentils

Tips

Can be served as is or over rice.


Directions

In a large pot, saute onions in a small amount of water for about 2 minutes until softened. Add (chopped) tomatoes and (minced fresh) ginger. Stir and cook for 3 minutes. Stir in spices. Add sweet potatoes, broth and lentils. Stir well and bring to a boil over high heat. Reduce to simmer, cover, and cook for 40 minutes or until potatoes and lentils are soft.

Serving Size: makes 8, 1 cup servings
