Ingredients

    5 tortilla, medium (approx 6" di Flour Tortillas
    .5 cup Egg substitute, liquid (Egg Beaters)
    3 large Egg, fresh, whole, raw
    .5 cup, chopped Onions, raw
    .25 cup, pieces or slices Mushrooms, fresh
    1 cup Spinach, fresh
    5 serving Cheese - Laughing Cow - Garlic Herb Light x 1 Wedge
    .5 cup, shredded Cheddar or Colby Cheese, Low Fat
    2.5 serving Hillshire Farm Deli Select Black Forest Ham Ultra Thin 2oz (56g)

Tips

You can reheat it in the oven or microwave, just remove the aluminum foil before microwaving.


Directions

1.Dice your onions and mushrooms and heat them in a skillet that has been sprayed with a little cooking spray.

2.While they are cooking combine the eggs and egg beaters and whip them together in a bowl.

3. Add spinach to the pan and let cook about 30 seconds.

4. Remove the veggies from the pan and set aside.

5. Add egg mixture to the pan and scramble.

6. When eggs are done scrambling, remove them from pan and add combine with the cooked veggies. Allow them to cool.

7. Place each tortilla on a sheet of aluminum foil. Spread one wedge of garlic herb cheese on each tortilla. Lay two pieces of ham on each tortilla. Then add a scoop of the egg mixture to each, evenly distributing among all 5 burritos. Top each with a sprinkle of Shredded low fat cheddar cheese. Roll up and then wrap in the foil.

8. Place all wrapped burritos in a gallon ziploc bag and place in the freezer.

9. Reheat as needed throughout the week.
