Introduction

Updated version of an old British favourite. Updated version of an old British favourite.
Number of Servings: 2

Ingredients

    2 Yves Vegetarian Spicy Italian Sausages, sliced into rounds
    1 medium onion, chopped
    2-3 cloves garlic, chopped
    Generous handful mushrooms, chopped
    Generous handful kale, washed and chopped
    1 cup sweet red pepper, chopped
    Generous splash balsamic vinegar

    2-3 red potatoes, steamed or boiled
    Butter and milk to taste

Directions

Put potatoes to cook. While they are softening, heat oil in large saucepan. Add chopped onions and garlic and saute until translucent. Add chopped sausage and mushrooms and saute,stirring, until sausage looks brown and appetizing. Deglaze with balsamic vinegar. Add washed kale and pepper, turn heat down to low and cover, just for a few minutes - don't overcook the kale and papper.

Mash potatoes with butter and milk. Serve a cup of mashed potatoes topped with sausage and veggies. My MIL might not recognize it but we love it! Makes two generous servings.

    I would try this but the sodium content is out of a reasonable range for any meal. If you come up with a much lower sodium version I'll try it out. Thanks anyway and I appreciate your recipe post. - 8/9/09

    Incredible!
    This is absolutely delicious! My non-vegetarian boyfriend from Great Britain even liked it! I used Veggie Patch apple spice sausage, which reduced the calories a bit and even looked a bit like bangers! Great innovation! - 8/17/08
