Ingredients

    3 Tbs Butter, salted
    1 onion at medium dice
    2 Carrots, thinly sliced
    1 cup Celery, chopped (3 stalks)
    1 Red Bell Pepper, chopped
    27 oz white beans, (3 cans, rinsed and drained)
    1 cup Tomato Sauce
    4 cup Low Sodium vegetable broth
    .5 tsp Pepper, black
    1 tsp crushed red pepper flakes
    1 tsp Garlic, minced
    1 Tbl dried Basil
    1 Bay Leaf



Tips

For a special touch, top with Fresh grated parmesan and a sprinkle of Sriracha sauce.


Directions

1. Melt butter in a large stock pot over medium heat.
2. Sauté onion, carrot, celery and bell pepper until onion is translucent, about 7 minutes.
3. Add remaining ingredients and bring to a light boil.
4. Reduce heat and continue cooking 45 minutes.
5. Remove bay leaf and serve.

Serving Size: makes six 2-cup servings
