Ingredients

    12 serving(s) Falls Brand Bacon
    2 sweetpotato, 5" long Sweet potato
    3 cup Fresh Brussel Sprouts
    94 grams Red Onion
    12 large Egg, fresh, whole, raw
    2.65 oz Thai Kitchen Light Coconut Milk
    4 tbsp Trader Joe Nutritional Yeast
    0.5 tsp Garlic powder

Directions

Preheat oven to 425, spray 9x13 casserole dish with coconut oil, and line a baking sheet with parchment paper. Cook bacon until crispy, drain on paper towels and reserve bacon grease. Slice peeled sweet potatoes into 1/4” rounds and line casserole dish with them. Bake for 30 minutes. Half brussel sprouts and place on baking sheet. Add to oven at 20 minutes. Caramelize onions in bacon grease. If you do it over 25 minutes it will bring out the flavor. Whisk eggs, coconut milk, nutritional yeast, and garlic powder together. Once sweet potatoes and Brussel Sprouts are done layer sprouts over sweet potatoes, then onions and bacon. Pour egg mixture over top. Reduce oven to 400 and bake for 25 minutes or until toothpick comes out clean. Allow to cool for 5 minutes and enjoy. Serving Size: 10

    This recipe sounds right up my alley! I see that it serves 10 and calls for 12 servings of Falls brand bacon, but the nutritional breakdown reads that only 6 calories per serving come from bacon. Is this a typo? - 12/16/20
