Ingredients

4 serving Bacon - Applegate Farms Natural Sunday Bacon
4 clove Garlic
2 cup, chopped Carrots, raw
1 cup Leeks
1 cup, chopped Onions, raw
3 cup, chopped Cabbage, fresh
2 cup, sliced Zucchini
4 cup (8 fl oz) Chicken Broth
4 cup Beef broth, bouillon, consomme
.25 cup Tomato Paste
2 cup Beans, red kidney
2 cup Hunt's Fire Roasted Diced Tomato
Directions
4 oz thick cut bacon - cooke over medium heat until just crispy. Add 2T butter. When melted, add garlic carrots, onion and leeks. Cover and cook 10 minutes (stirring occasionally).
Add cabbage, zucchini, both stocks and tomato paste (2T). Bring to a boil then reduce to simmer. Add parsley 2 t dried oregano and 1 1/2 t dried basil, salt and pepper to taste. Simmer 15 minutes.
Add beans and tomatoes and simmer another 15 minutes. Adjust seasonings and serve topped with grated romano or parmesan cheese and a drizzle of olive oil.
